Mayonnaise

Ingredients

an egg yolk
sunflower oil – 150ml
lemon juice (quarter of a lemon’s worth)
mustard – half a tsp
black pepper
salt

Method

Combine the egg yolk, lemon juice, mustard, and pinches of black pepper and salt in a bowl. While using a hand blender drizzle in the sunflower oil until a thick emulsion is formed – delicious mayo!

Commentary

Mayonnaise is a great condiment as it is one of the few that can be used to add richness to a dish. It is of course largely composed of fat from the oil and egg yolk, and is an object lesson in how to enhance the digestibility of rich fatty food; sour (lemon juice) to stimulate the bowel and spicy aromatics (mustard, black pepper) to stimulate motility are essential flavour components of a fatty recipe.
